I'm wondering if theres a way to handle moving lights with "fine" and "course" channels for adjustments other then pan and tilt.
I know I could control them each manually, but I'm looking for something more seamless.

LXConsole and moving lights
At this moment LXConsole does not have a method for handling 16bit controls. Even the Pan/Fine Pan position subchannels are linked only in the channel controls window. When they fade, they fade independently as single dmx addresses. This issue is on the list of projects. But, it requires a redesign of the fading architecture and a method for designating a pair of channels/addresses as linked and should be treated as a 16 bit value.
This is a general issue with DMX and I'm not aware of a standard method of dealing with it. Its not uncommon to have 16bit channels these days. But what about 32bit? At that level 512 becomes 63... I'm going to guess that ACN will handle those bigger data loads and will carry DMX as a subset. So, the question becomes what to support in a conventional DMX based controller like LXConsole. 16bits is probably enough.
