Sorry for the rather basic question but I have not found what I am looking for on my own... Is there anyway to use the USITT info containers for channel and dimmer information? somethings in the settings I am just not seeing?

Yes, you can put a hexagon or circle around a displayed info field. In the Inspector's stroke/fill tab there is a section in the lower set of controls called "field". Selecting a field and then choosing hexagon or circle from the popup menu will set that style for all similar info fields. (you may also want to adjust the font depending on how the information fits in the circle or hexagon)
